How to Use Western Premium BBQ Products Mesquite BBQ Cooking Chunks You can use Western Premium BBQ Products Mesquite BBQ Cooking Chunks for smoking meats in a variety of ways. They can be used in a charcoal, gas, or electric grill as well as personal and larger smokers. To use our wood cooking chunks for smoking in a charcoal grill, load your grill with lump charcoal. At Western, we recommend against using briquettes. Light the charcoal using your preferred method; however, we would recommend you avoid using lighter fluid so your meat retains the natural mesquite smoke flavor. Several minutes prior to cooking, add 3-5 dry mesquite cooking chunks on a standard grill so they have time to smoke. Add your meat to the grill, close the lid, and smoke until you achieve that great mesquite smoke flavor. Continue to add wood cooking chunks every 20-30 minutes during your cooking process. Make sure to add more charcoal around every hour to keep your cooking chunks smoking. If you're using wood cooking chunks for smoking your meats on a gas or electric grill, place dry cooking chunks in a pyramid on top of a solid fire starter leaving an edge exposed. Light the fire starter. Let the cooking chunks burn for 15-20 minutes with the lid and all vents open. If you desire a milder flavor, cook longer. Close the vents and lids, and wait for the flames to subside. Spread the cooking chunks evenly on the grill, and add your food. Close the lid and let the meat absorb that delicious mesquite smoke flavor. If you're using a smoker instead of the grill, follow the manufacturer's instructions for smoking meat. If you are interested in barbecuing with wood chips, try this one first. Apple wood is a great choice for all meats! The Flavor of your food is so much better! Soak your wood chips for at least 5 minutes, 15 is best though, that way the chips smoke better and don't burn up as quick! And try not to open your grill until you really need to. You want that smoke in there! Yummy!!!Patty
Invaluable for barbecuing.
I have an 8o year old brick/stone BBQ pit on my property I've just restored. I throw 4-5 of these down on the brick floor and I can cook 4 steaks at a time to perfection with these wonderful precut chunks of hickory. You'll have to use kindling, starter bricks won't light these blocks but the kindling really gets them going. Worth the hassle of hauling this big bag around, have a wheelbarrow handy. Good Product at a nice price
The Hardwood Chunks are more cost effective then the chips, when used in a smoker, but don't give off as much smoke then the chip, as they burn a little slower. I found I could split the chunks a little finer, so they were bigger then the ready made chips, so lasted a little longer but would burn and produce more smoke, quicker then the larger chunks. I like the variety of hard woods and like to experiment with different woods to get different tastes.Larry
